There are many websites which states that pure liquids and solids have a concentration equal to one, but for some equations they are not!

How do you explain the difference for this equation? For the esterification, why are the liquids not equal to 1 when putting into K?

Also, what about solids makes their value to put into K, 1? Surely the amount of solid shifts the equilibrium position?
